What's on YOUR menu?

This momma is STUMPED. We're eating the same things week after week. I need new, realistic ideas. Realistic, as in I want it to be hearty and satisfying while somewhat healthy (at least) while only taking a half hour to throw together because I just worked 10 hours and now I'm at home with my circus and we're starving and I don't have that much time in the evening with them to be slaving it all away in front of the stove. (How's that for a run on sentence?) So my question is, what are you having for dinner? And maybe what are some of your favorite recipe or food blogs?

What about crock pot meals? I LOVE to make meatballs in the crock pot, and my faithful fallback is always taco soup in the crock pot. I've been thinking of doing once a month cooking and freezing them. It does take planning because you have to pull the meal that you want to have the next day out of the freezer the night before but most of them just need to be heated up once they are thawed.

O, man... I am not a stellar performer when it comes to feeding my kids. Too many picky eaters and not enough patience or stern-ness. (that means I am a wimp). I model great eating for my kids, but they seem really slow on the uptake ;-)

I recently tried making black bean burgers. It is super fast and easy and very healthy. put a can of black beans, an egg, and some cut up veggies (bell pepper, zuccini, corn, etc), a cup of bread crumbs in a bowl and mash them all up together. Form into patties and put them in a skillet with a tablespoon or two of oil. Fry them up (they do come apart easily so be gentle when flipping). Serve them on a slice of bread, cornbread, or a bun and top with salsa. Super easy, fast, and healthy.
